Baked Mini Pierogy Parmigiana
1 box Mrs. T's Mini Pierogies 1 cup tomato or marinara sauce 1/2 cup ricotta cheese 1/4 cup shredded mozzarella cheese 1/4 cup grated parmesan cheese 1 egg (lightly beaten) 3 teaspoons Italian seasoning
Place mini pierogies in boiling water until hot, 3 to 4 minutes. Combine all ingredients reserving half of the mozzarella & parmesan cheeses. Spread into a greased baking pan, top with reserved cheeses. Bake at 350 degrees for 30 minutes or until center is heated. Let stand for 5 minutes before serving.
