Mushroom Hors D'Oeuvres Mini Pierogies

1 bag (100 CT.)Mrs. T's Mini Pierogies
1 tablespoon olive oil
1 1/2 Tablespoons butter
1 1/2 pounds chopped mushrooms
1 cup chopped onion
1 cup white wine
2 teaspoons thyme
1 teaspoon salt
1 teaspoon pepper
1 cup water
2 Tablespoons cornstarch





Bake Mini Pierogies on a cookie sheet sprayed with cooking spray (also spray the tops with a light coating) at 450 degrees F for 15 to 20 minutes until lightly browned. Saute oil, butter, mushrooms and onion until translucent. Add wine, thyme, salt and pepper. Simmer for 2 to 3 minutes. Blend water and cornstarch. Add to mushroom mixture and cook for an additional 2 to 3 minutes to thicken. Top Mini Pierogies with mushroom sauce. Garnish with chives, if desired.
